Apple Pie, otherwise known as Tartes of Apples without Covers

Original Recipes


Tartes of Apples with Covers.
Mince your Apples very small, season them with Sugar, sinamon & ginger, and laye thereon a faire cover, and dresse your cover when it is halfe baked with Rosewater and Sugar. (A Book of Cookrye, from 1591)

Tartes of Apples without Covers.
Boyle your Apples very tender in a little wine, or for lack of Wine Ale, and then strain them with Sugar, sinamon and ginger.  Make a tart of it without a cover. (A Book of Cookrye, from 1591)

To Make Paste, and to Raise Coffins
TAke fine flower, and lay it on a boord, and take a certaine of yolkes of Egges as your quantitie of flower is, then take a certaine of Butter and water, and boil them together, but ye must take heed ye put not too many yolks of Egges, for if you doe, it will make it drie and not pleasant in eating: and yee must take heed ye put not in too much Butter for if you doe, it will make it so fine and so short that you cannot raise. And this paste is good to raise all maner of Coffins: Likewise if ye bake Uenison, bake it in the paste above named. (A Good Huswife's Handmaide, from 1594)


Similar Period Recipe

To make pies of greene Apples.
Take your Apples and pare them cleane, and core them as ye wil a quince then make 
your coffin after this man-ner, take a litle fayre water, and halfe a fishe of 
butter, and a litle Saffron, and set all this upon a chafindyshe, tyll it bee hote, 
than temper your flower with this sayd licour, and the white of two egges, & also 
make your coffin and season your Apples with Cinamon, Ginger and Sugar inough. Then 
put them into your coffin, and bake them. (A Propre New Booke of Cokery, from 1575)


Ingredients

Filling:
5 apples, peeled, cored, and sliced
1/2 cup sugar
1/2 tsp cinnamon
1/2 tsp ginger

Pie crust:
1 1/4 cup flour
3 Tbsp water
1/4 cup unsalted butter, melted
1 egg yolk


Instructions

Mix the pie crust ingredients together and roll out on to a pie pan. Bake at 400ºF for 10 minutes.

Mix the filling ingredients together and place in the baked pie crust. Bake at 325ºF for 1 hour.
