Upside Down Banana Cake

Ingredients:
 
4 ripe bananas, sliced
8 Tbsp unsalted butter
1 cup brown sugar
3 cups flour
1 3/4 cup sugar
1 1/2 tsp baking powder
3/4 tsp salt
4 eggs
3/4 cup canola oil
1 cup whole milk
1 Tbsp vanilla
 
 
Instructions:
 
Preheat oven to 350ºF. Spray non-stick cooking spray on a 9x13 inch baking dish. Line the bottom of the baking dish with the banana slices. 

Melt the butter. Add the brown sugar. After the sugar has dissolved in the butter, pour mixture over the banana slices. Set the dish aside.

Whisk together the remaining ingredients. Pour this mixture on top of the brown sugar / butter mixture in the baking dish.

Bake for 40-45 minutes. Let cool for at least 15 minutes before serving.

Orange Mini-Muffins

 


 

Here is a delicious orange mini-muffin recipe! 

 

Ingredients: 

1/2 cup sugar 

1/2 Tbsp baking powder 

1/4 tsp salt 

1/4 cup butter, melted 

1 egg 

1/4 cup milk 

1/4 cup orange juice, freshly squeezed * 

1/2 Tbsp vanilla 

1 1/4 cup flour * 

 

Instructions: 

Bake at 350ºF for 17 minutes. Yield = 24 mini-muffins 

 

 * The recipe above is for subtle tasting muffins. If boldly tasting muffins are preferred, add another 1/4 cup of orange juice (so 1/2 cup total) and another 1/4 cup flour (1 1/2 cup total of flour).
