Cornbread Pudding

For dinner today, I made cornbread pudding for the first time. It came out creamier than I had expected, like a cross between cornbread pudding and corn pudding. However, when your children are immediately asking for seconds before they finish the rest of their meal, I must have done something right.

Ingredients needed:

1/2 cup butter, melted
1 8oz. container sour cream
2 eggs
1 can cream style corn
1 can white corn
1 can whole kernel corn
1 8.5oz. package corn muffin mix

Preheat the oven to 375 degrees F.  First, mix the melted butter with sour cream and eggs.  Then, add in the corn.  Finally mix in the corn muffin mix.  Put in a 13x9 greased pan and cook for about 45 minutes.
