Carrot Soufflé

 


Ingredients: 

1 pound carrots 

1/2 cup unsalted butter 

1 tsp vanilla 

3 eggs 

3 Tbsp flour 

1 tsp baking powder 

1/2 tsp salt 

3/4 cup sugar 

1/8 tsp cinnamon 

 

Instructions: 

Preheat oven to 350ºF. Chop carrots and boil in salted water for 15-20 minutes. Drain carrots and then mash. Mix in remaining ingredients. Pour into a greased baking dish. Bake for 45 minutes. Serve and enjoy!
