No Bake Peanut Butter Balls with Honey and Kix Cereal

 
   Ingredients:
1/2 cup sugar
1/2 cup honey
1/2 cup peanut butter
1 tsp vanilla
4 cups Kix cereal


   Instructions:
Heat sugar and honey over medium to a slow boil. Remove from heat. Stir in vanilla and peanut butter. Add in Kix cereal. Put into balls on a foil sheet. Allow to cool before eating. Serve and enjoy!

My spice cabinet is now organized! When we first moved into this house, I was so eager to unpack as many boxes as possible. So, I simply put things wherever they fit, but not necessarily with any rhyme or reason in some of the cabinets and drawers.

Apple Cinnamon Muffins made with Oatmeal Baby Cereal

Do you have extra baby cereal that you don't know what to do with? Try out this delicious recipe!


Ingredients:
1 cup sugar
1/2 cup unsalted butter, melted
2 1/4 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
2 eggs
1/2 cup milk
1 cup oatmeal baby cereal
1 1/2 cup flour
1 apple, peeled, cored, and chopped

Instructions:
Preheat oven to 350ºF. Mix ingredients together. Line a 12-cup muffin pan with baking cups. Pour batter evenly into the cups. Bake for 25-30 minutes.

Cheesy Frittatas with Goetta

 
 
   Ingredients:
4 eggs
1/4 cup whole milk
1/8 tsp salt
sprinkle of pepper
2 Tbsp + 2 tsp grated cheese
4 slices of goetta, cooked and mashed

*vegetables (onion, broccoli, spinach, etc) is optional


   Instructions:
Preheat oven to 375ºF. Spray 6 cup muffin pan with non-stick cooking spray. Mix ingredients together and divide between the 6 cups on muffin pan. Bake for 13-15 minutes, until the tops begin to set.

Eyngemachten # 18 - Preserved Candied Peaches

Introduction

In Marx Rumpolt's 1581 cookbook called Ein New Kochbuch, there is a recipe for Eingemachten 18.  The word "eingemachten" is German and it refers to preserved fruits.  So, preserved fruit recipe Eyngemachten #18 is for preserving peach bites.

For my experiment today, I do not have fresh peaches. So, instead I will be using a store bought container of peaches. Also, I would recommend using a flat sieve for this recipe. I do not have a flat sieve. So I am using the sieve that I do have, to allow the juices to fall through.

Materials

peaches
sugar


Procedure

Peel and slice up fresh peaches. Sprinkle sugar on the sides of the peach slices. Lay slices in a sieve in the sun. If it's outside, cover the sieve with a thin fabric.

Do this recipe in the morning, as it will take most of the day for the peaches to dry out.

After the peach slices have dried, serve and enjoy!

Peach Bread

Ingredients:

1 egg
1 cup sugar
1 tsp vanilla
1/2 cup canola oil
1 cup diced, canned peaches (drained)
1 1/2 cup flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp cinnamon


Instructions:

Preheat oven to 350ºF. Spray non-stick cooking spray in a 8x4 inch loaf pan. Mix ingredients together. Pour batter into loaf pan. Bake for 1 hour. Serve and enjoy!

Peach Cobbler

 
 
Ingredients:

1/2 cup unsalted butter, melted

1 cup flour
1 cup sugar
2 Tbsp baking powder
1/4 tsp salt
1 cup milk

4 cups undrained, canned peaches*

1 tsp cinnamon (optional)
1/4 tsp nutmeg (optional)


Instructions:


Preheat oven to 350ºF. Melt butter and pour into a 9x13 inch baking dish. Mix together flour, sugar, baking powder, salt, and milk in a bowl. Pour the mixture on top of the butter. Place peaches on top of the mixture. Sprinkle cinnamon and nutmeg on top of the peaches. Bake for 40-45 minutes, or until golden brown. Serve warm or cold.






* If using fresh peaches, bring 4 cups of sliced peaches to a slow boil with 1 cup of sugar. Stir constantly.
